A keto mug cake for Valentine’s day – chocolate, of course – you can whip up in a jiffy in the microwave. This low carb dessert comes together in under two minutes and uses no fancy ingredients or equipment. It’s perfect for sharing, especially now Valentine’s Day is around the corner and, trust me, there isn’t an easier way to impress your loved ones.

Don’t worry if the carbs look like a lot. The cake is pretty heavy so you’re not going to be eating all of it in one sitting. That’s why it’s important to share! Anyway if almond flour isn’t your thing then I’ve got a delicious recipe for a microwave cake using coconut flour.

- 25 grams Almond Flour I use this one
- 2 Tbsp Unsweetened Cocoa Powder I recommend this one
- 1 Tbsp Melted Butter Coconut Oil can also be used
- 1 Tbsp Heavy Whipping Cream I recommend this one
- 1 Egg
- 1/4 Tsp Vanilla Extract I use this one
- a pinch Salt to Taste
- Stevia to taste I recommend this one
- 10 grams Dark Chocolate (85% or Higher) I use Lindt 90%
- 10 grams Butter Try this one
- 1 Tbsp Heavy Whipping Cream I recommend this one
- Stevia to taste I recommend this one
- a pinch of Salt Use only if the butter is unsalted
- Whisk wet ingredients together.
- Add almond flour and cocoa powder to the wet ingredients and whisk until smooth.
- Microwave for 1 minute for a fudgy texture, 1 minute 10 seconds for a more cakey texture.
- Serve with our chocolate ganache or peanut butter or whipped cream.
- Break the chocolate into pieces and melt with butter in the microwave for 20 seconds.
- Add in the cream and mix well.
- Use as a topping where desired. Preferably on that microwave mug cake.

July 27, 2019 at 11:17 amHi from Ireland. I love your recipes. Great variety. Would it be possible for you to give the Microwave “watt” settings please especially for your Cup Cakes? If the setting is too high the cup cake will spill over out of the mug and if too low, will not cook the cakes properly.
Also, for “cream” cheese, do you generally use “Cottage” cheese? Your videos look more like cottage chesse that what we call cream cheese which is usually the brand name Philadelphia.

July 29, 2019 at 2:47 amI use Philadelphia cream cheese or a local brand that’s an exact version. We don’t use cottage cheese at all here. We use something called PANEER for savoury dishes which is often called cottage cheese but it’s not it’s a fresh cheese actually. Also my microwave is 1200watts if I am not mistaken. The cake will rise up and then come back down it won’t spill over. Unless your mug/ramekin is too small.

October 3, 2020 at 2:51 amSuper good, great texture, definitely satisfies your chocolate craving. It was so decadent that I could only eat half this portion. It really is satisfying. It’s really rich in flavor. Plan to remake it with a different topping the bread is so rich and chocolaty that I wanted to cut the richness with something lighter, maybe whipped cream. My kids absolutely loved this.
