Vanilla Coconut Flour Mug Cake & Chocolate Peanut butter Ganache

I just realized that on every almond flour recipe I have people ask me if they can make it with coconut flour and vice versa. So this recipe was inevitable. I made a delicious Keto chocolate mug cake using almond flour and of course, the first comment was ‘can I make this with coconut flour’. So this had to be done, I devised a recipe for a mug cake with coconut flour. Now you have the option of a mug cake with coconut flour as well. Hope you enjoy the recipe.

What’s on top?

For this recipe I chose to make a chocolate and peanut butter ganache as I felt it would pair well with the vanilla flavoured cake. You could also add cocoa powder to the cake itself to give it a chocolate flavour and skip the ganache, but why would you? If you aren’t a chocolate fan (is that even possible?) then you can always try a cream cheese or mascarpone frosting to go with the cake. And if your middle name is lazy, then just pour over some sweetened heavy cream or whipped cream.

For Vanilla Coconut Flour Mug Cake

  • Mix all the ingredients well in a bowl or in a mug
  • Microwave for 90 seconds
  • Serve

For Chocolate Peanut Butter Ganache

  • Microwave the cacao butter and peanut butter for 1 minute and mix till melted
  • Add in the coco powder and stevia and mix well
  • Add in the coconut milk and mix
  • Serve

  1. I baked mine at 350 F for about 15 minutes. Ended up trading out 2 tsp of the coconut flour for cocoa powder to make a chocolate cake, and it was deeelicious! The texture is fantastic – fluffy, soft, with just the right bite to it – and it’s super filling, too.

    1. No why would you do that? Coconut flour and coco powder are 2 different things. You can add 1 tbsp of cocoa powder if you want to turn it into a chocolate cake but you need that coconut flour.

    2. No you can’t replace the flour in the cake with cocoa powder, they are 2 different things.
