Keto Egg Masala

Eggs are vegetarian!

If you have been following HK for a while you know about my frustrations with Indian viewers constantly asking me for ‘eggless’ recipes. Now don’t get me wrong, I have no issue with anyone not wanting to eat eggs, not liking eggs or anything of that sort. My issue lies with the premise of being an Indian ‘pure veg’. Without getting too deep into this, it comes from the horrible Hindu caste system where Brahmins who don’t eat eggs and meat are seen as ‘pure’ and everyone else is ‘non veg’, yep that’s actually a term used in India. I also take issue with people not even knowing how eggs are produced and being unaware that they are not fertilized and hence, vegetarian. Anyway, before I go deep down the rabbit hole let’s talk about today’s recipe.

It’s an Anda Masala that I’m cooking up today. Anda is the Hindi word for egg and this is one egg-celent dish. It’s boil eggs cooked in a spiced butter and then cooked further in a gravy of onions and tomatoes. Yes, you can eat onions and tomatoes on Keto and if you have a problem with that please watch my video ‘What foods can I eat on Keto’. Anyway, enough jibber jabber and lettuce cook.

Counting carbs & a serving

If you watched the video, you saw 7 eggs. The recipe shows 6 eggs. The reason I did this was because this recipe makes 3 servings which means 2 eggs per person. Imagine dividing 7 eggs into 3 servings, it’s just painful maths. I’ve just simplified it. You can easily up the fat as well by just adding butter on top of your portion and if you wish to reduce carbs just use less onions and tomato. I personally think at 5g carbs for a serving isn’t bad at all. So it’s your call.

While cooking this you can add more water to it to making it more of a ‘curry’. You can blend the masala to make a smoother paste. You can add some cream to this for a richer curry. I think there are plenty of tweaks you can make to this recipe to take it up a notch. I wanted to keep it simple and authentic. Anyway, enjoy!

Ingredients
  • 6 Eggs
  • 100 grams Onion
  • 100 grams Tomato
  • 10 grams Ginger Garlic Paste
  • 3 Tbsp Butter
  • 1/2 Tsp Tumeric
  • 1 Tsp Red Chilly Powder
  • 1 Tsp Coriander Powder
  • 1/2 Tsp Garam Masala Powder
  • 1/2 Tsp Black Pepper Powder
  • 1 Tsp Kasuri Meth/Dried Fenugreek Leaves I recommend this one
  • 1 Tbsp Cilantro/Coriander
  • 1/2 Tsp Cumin Seeds
  • 1/2 Stick Cinnamon
  • 3 Cloves
  • 3 Green Cardamons
  • Salt to Taste

Instructions
  1. Start by boiling the eggs and peeling them. Then prick them with a fork.
  2. Heat half the butter in the pan and add in 1/2 the spice powder and fry together for 30-60 seconds. Then add in the eggs and mix well and cook for 3-4 minutes of a low heat till the eggs start to get some colour.
  3. Remove the eggs and set aside. Add the remaining butter and onions. Fry the onions till they turn translucent and add in the ginger garlic paste, cinnamon, cloves, cardamon and season with salt.
  4. Fry and brown the onions and then add in the tomato, the remaining spices and some water and cover and cook for 10 minutes. Stir occasionally to ensure nothing burns. Season to taste
  5. Add in the kasuri methi and mix in well. Add the eggs as well and mix and then cover and cook for a few minutes
  6. Finish with coriander and serve.

    Wow! You had to bring up the caste system didn’t you? No religion is perfect. Neither is yours. The “horrible” Islam religion has as many faults as any others. You want me to start talking about how Islam treats women?

    For your information the reason people prefer no eggs is because eggs whether “vegetarian” or not come from farms where chickens are abused and treated horribly. Avoiding eggs is an act of compassion.

    I was a regular watcher of your videos until now. Not only will I start avoiding your videos I will be posting your “Horrible Hindu caste” comment on as many blogs as possible. Don’t bother deleting this post. I already have a screenshot.

      You know that I am a Hindu right? And you are aware that MILK is as much a torture process as eggs is right? SO your argument holds no water. And you can post whatever you want it’s a free world. The Hindu caste system is horrible and nothing can change that. It’s a cancer to the religion itself. Either way I’m an atheist so I really don’t care about ANY religion.

      And tell me why does your compassion not extend to your fellow humans? You think having a caste system and treating people like untouchables is compassion? You want to show compassion to chickens but you will abuse the cow and keep her pregnant and in a state to give you milk but a chicken laying an egg is cruelty? Do you realize how ignorant you sound? And I don’t need to delete you comment because I can hold my own in a discussion.

    Please do not bring religion when you are doing a cooking video. It is also not right to generalize a particular set of individuals based on some random comment by someone. Restrict your jibber jabber to cooking only. We love your style of talking but please don’t let it go disarray. Can we say something bad about your Sindhi community based on your biased/prejudiced statement about someone/something?

      You can absolutely say whatever you want. I have no affection towards it. Also you missed my point completely. If there is something bad in anything, be it a religion or a community, that is a bad point. Your religion and community can be updated. I am atheist and I do not believe in god but I don’t god to know that something is wrong and not good. Whatever I speak is the truth, sometimes it hurts. If people kept their religion away from me I would not talk about it. Hope you understand my point right? I didn’t say Hinduism is horrible, I just pointed out what is wrong. Are you trying to tell me the caste system is correct? If you think that way then don’t come to my website ever because I would rather not help people who think like this.

    Your channel is here only because of your viewers. If you are so much ‘frustrated’ with your Indian viewers, then put a disclaimer that Indians are not allowed to subscribe. You and your mouth and your ‘fighting’ attitude!

      It’s a free world. I will never stop anyone from subscribing. Unlike you I don’t discriminate against people based on their ethnicity. I have many Indian subscribers who have no issues with my opinions. So far I can count you and 1 other person who have problems and you are free to do whatever you want. I will always fight for what is right and to remove ignorance from people. But I cannot force you to be less ignorant and more compassionate and understanding. So you do what you want and I will do what I want.
