This is a simple keto pancake recipe for those who are missing their regular pancakes now that they’re on a keto diet. I’ve always thought of pancakes as more of a dessert food than breakfast but perhaps they are a little bit of both. Make these low carb pancakes with some coffee and eggs, and you’ve got one fun breakfast on your hands.

It’s hard to pass up such an easy recipe!

  • Large eggs
  • Almond flour
  • Cinnamon powder
  • Butter
  • Stevia to taste

Three Ingredient Keto Pancakes Directions

  1. In a blender add the eggs, almond flour, cinnamon and sweetener. Blend to make the batter.
  2. Heat the butter on a skillet or non stick pan and then pour in the batter. You can make 1 large pancake or 3 small ones. I like to cover the pancake and cook for 2 min on a medium-low heat so that when I flip it the batter doesn’t fly since the steam cooks the pancake. You can otherwise cook for 2 min on a medium heat before flipping.
  3. Serve the pancakes with some butter and Keto friendly syrup.

Can I Make This With Coconut Flour? 

The most common question I guess is can I swap out almond flour for coconut and the answer is yes. These can easily be turned into coconut flour pancakes. However, compared to the 50g of almond flour that these almond flour pancakes require, 

you will only need 20g of coconut flour since that’s more absorbent. Also, you can swap out the cinnamon for vanilla extract too. And when it comes to the sweetener you can either skip it or use any keto friendly sweetener that you like. You can also make a big batch of this batter and keep it in the fridge for the entire week.

 

Decorating Your Pancakes

When you’re done you can top these with some fresh fruit, chocolate chips, peanut butter, etc. Next time, you can even throw some blueberries in the batter to make blueberry pancakes. There are definitely ways to create different flavors. I use the Monk Fruit maple flavoured syrup which some fans from the USA sent me as unfortunately we don’t have any such syrup available in India. Pancakes aren’t really a breakfast staple here and hence no sugar free options exist. You can get the regular syrups but a keto friendly one would be hard to come by. I’d recommend maybe making berry puree or just eating with butter and some heavy cream with stevia. I think this is a great recipe as it is but there are always ways to make a recipe better suit your specific taste buds.

The best thing about this easy low carb pancake recipe is that it can be really versatile.

  2. It was wow earlier I was irritated with blending etc but turned out worth can add vanilla extract to make a different twist or cocoa powder
    Yumm!! My must have breakfast now!
