Easy Keto Salad with Chicken
Junglee Chicken Keto Salad
This Keto salad recipe is inspired by a chicken junglee sandwich. Growing up in India this was a sandwich I ate regularly. And was probably my fav sandwich as a child. It’s this mayo based sandwich with some coriander, sometimes onion and Worcestershire sauce.
Over time, as I grew up I ate less of it. But a local airline called Indigo introduced it on their in flight menu and that’s when nostalgia hit me again. I decided to make this Keto salad inspired by that very sandwich. The salad I must say turned out just as good!
Make this vegetarian
I’m sure someone will want a vegetarian version of this salad. So I say use some boil eggs and mash them up with the mayo and Worcestershire sauce and then add the rest of the ingredients. You can also use paneer which is a fresh Indian cheese to replace chicken. I’ve got a video showing you how to make paneer at home if you don’t get it where you live.
And as always I’ve got a bunch of other salad recipes that I’d love for you to try. My chicken salad with a peanut butter dressing is quite a hit. I’ve also got this epic seafood salad for those who enjoy their chicken of the sea. And of course my mom’s tuna salad recipe.
