Almond Flour Waffles

These almond flour keto waffles are crisp on the outside and soft in the center, with cheddar helping them brown and adding extra richness. They take about 15 minutes from start to finish, making them an easy low-carb breakfast when you want something quick but more substantial than eggs.

Ingredient Notes

  • Almond Flour: Use finely ground blanched almond flour for the best texture. Coarser almond meal will make the waffles heavier and more grainy.
  • Cheddar Cheese: Finely grate the cheddar so it melts evenly into the batter. Mild or medium cheddar works well if you want the cheese to stay subtle.
  • Heavy Cream: Heavy cream adds moisture and richness to the batter. Use a cream with at least 30 percent fat.
  • Baking Powder: Baking powder gives the waffles some lift and helps keep the center from becoming too dense.
  • Stevia: Use enough stevia to lightly sweeten the waffles.
  • Egg: Use a fresh egg for the best flavor and texture. It binds the batter and helps the waffle hold together as it cooks.

Expert Tips

Preheat the Waffle Maker Fully

Let the waffle maker come completely up to temperature before adding the batter. A properly heated surface helps the outside set quickly and gives you better browning.

Don’t Overfill the Waffle Maker

Pour the batter into the center and spread it only if needed. Leaving a little room around the edges gives the batter space to expand without spilling out.

Let the Waffle Cook Undisturbed

Avoid opening the waffle maker too early. The waffle needs time to set before it will release cleanly from the plates.

Use Browning as Your Guide

Waffle makers vary a lot in size and power, so the cooking time is only a guide. Look for an evenly golden exterior and a waffle that releases easily from the iron.

Storage and Leftovers

Allow leftover waffles to cool completely before storing them in an airtight container in the refrigerator for up to 3 days.

For longer storage, freeze the waffles in a single layer until firm, then transfer them to a freezer-safe bag or container. They can be frozen for up to 3 months.

Reheat refrigerated or frozen waffles in a toaster, air fryer, or oven until hot and crisp. Microwaving works, but it will give you a much softer texture.

    1. Just add vanilla extract about 1/2 tsp or 1 tsp and some sweetener, whichever one you like. Let the cheese and everything be the same.

  3. Hi Sahil. It’s a pleasure coming across your website. Can I do grilled chicken (seasoned with buttermilk, salt, pepper) instead of the other meats you have used.
