Bacon & Cheese Omelet

BAE – Bacon & Eggs, with cheese of course

Bacon and eggs is pretty much a classic combination. It’s also one of the most, if not the most staple breakfast item on the Keto diet. For me, bacon and eggs was also the perfect Keto snack since it was quick to make and I always had the ingredients on hand as they are a staple in my pantry. What’s different about the way I make this? Well for starters I use the bacon fat to cook the eggs. So starting the bacon in a cold pan allows the fat to render out and especially the kind of bacon I find in India is quite high in fat (as you will see in the video) and then I give it a different texture and flavour by adding fresh basil leaves which pretty much ‘deep fry’ in the bacon fat and get crispy. The many ways of making eggs

If you’re bored of the basic bacon and eggs, you can try a couple of our other egg recipes. One of my personal favourites is a masala omelet. You could also just jazz up your fried eggs with one of our recipes for cheese fried egg.  If you are feeling particularly fancy and have some time on your hands you can always whip up the fancy cloud eggs.

Ingredients
  • 1 Egg
  • 2 Rashers bacon
  • 1 Tbsp basil leaves chopped
  • 1 Tbsp Cheddar Cheese
  • Salt & Pepper

Instructions
  1. Chop the bacon and add to a cold pan
  2. Turn on the stove and allow the bacon fat to render out
  3. Chop and add the basil leaves to the hot pan and fry along with the bacon
  4. Beat and season 1 egg with salt and pepper and add to the hot pan
  5. Sprinkle on the cheese and fold the omelet
  6. Once cooked, remove and serve.
