Cucumber Sub Sandwich 2 Ways
Today we’re making Keto cucumber subs. Low carb and Keto are starting to get noticed by mainstream food channels and Tasty did a Cucumber Sub 4 ways and I thought I should give that idea a shot and see how it turns out. From the 4 they did the Caprese roll and the Salmon Cream Cheese roll appealed to me so I tried those out. Enjoy the video.

Cucumber Sub Sandwich 2 Ways
Ingredients
For Salmon & Cream cheese Cucumber Sub
- 1 Cucumber
- 4 Smoked Salmon (2 Slices)
- 2 tbsp Cream Cheese I use this one
- 1 tbsp olive oil I recommend this
- Dill
- 2-3 Chopped Gherkins Try these
- Fresh Pepper
For Caprese Cucumber Sub
- 1 Cucumber
- 40 grams Buffalo Mozzarella
- 2 tbsp HK's Pesto Get the recipe
- 20 grams sliced tomato
- Salt to Taste
- Olive oil to drizzle
Instructions
For Salmon & Cream cheese Cucumber Sub
- Peel the cucumber, slice into half and scoop out the middle. Please eat that or use it in some dish, don't waste it.
- Mix the cream cheese with chopped dill, gherkins, pepper and olive oil
- Spread the mixture onto the cucumber and top with the salmon
- Serve
For Caprese Cucumber Sub
- Peel the cucumber, slice into half and scoop out the middle. Please eat that or use it in some dish, don't waste it.
- Spread the pesto over the cucumber.
- Then layer with tomato and mozzarella
- Season with salt and drizzle with olive oil.
- Serve
A BLT (Bacon, Lettuce and Tomato) version would be terrific!
