Pork Vindaloo that you can hold in your hand

If you watched my full day of keto eating vlogs you would have seen the short and sweet tour of my freezer. I had some pork spare ribs in there and it was time I cooked em up. So I gave it a go today and while the end product tasted good, I made a huge botch job of the butchery of the pork and I didn’t marinate it long enough because I wanted to release this episode. So just do as I say and don’t do as I do.

Learning to make the most of your kitchen disasters

We all make mistakes in the kitchen. Even the best chefs have failed more times than they have succeeded. That is how we learn. For me personally I try and make sure my disaster is edible because for me personally, I hate wasting food. Of course there have been times where my disasters have been inedible, but that’s ok! Eventually I did get better at cooking my ribs and made some delicious Keto BBQ ribs and I also made a sick Pork Vindaloo where I made the paste from scratch.

  • Marinate the pork ribs in salt and the vindaloo paste for 24 hours
  • Pressure cook for 30 minutes or slow cook in the oven for 2 hours covered in tin foil
  • Once cooked quickly sear in the pan
  • Enjoy!
