50gketo sweetener1:1 sugar substitute (I used stevia)
42gketo-friendly chocolate chips
For the Whipped Cream Topping:
100mlheavy creamchilled
1tsppure vanilla extract
2tspketo sweetener1:1 sugar substitute (I used stevia)
Instructions
Prepare Whipped Cream Topping:
In a large bowl, combine chilled heavy cream, pure vanilla extract, and keto sweetener.
Using an electric whisk or a hand mixer, whip the mixture on medium speed until it begins to thicken. Continue whipping until the mixture forms soft peaks. The cream should hold its shape fairly well but gently folding over at the peaks when the whisk is lifted.
Make Hot Chocolate:
In a small saucepan, add chilled heavy cream.
Sift in unsweetened cocoa powder and stir until fully integrated.
Add water, keto sweetener, a pinch of salt and keto-friendly chocolate chips.
Heat the mixture over low heat, stirring continuously until the chocolate chips are completely melted and the mixture is smooth.
Bring the mixture just to a gentle simmer, then remove from heat immediately to avoid boiling.
Serve:
Pour the hot chocolate into serving cups.
Top each cup with a generous dollop of the whipped cream prepared earlier.
