Ingredients
 
 

  • 9 oz Skinless Boneless Chicken Breast
  • 1 Tsp Old Bay Seasoning
  • 1 Egg
  • ¾ cup Psyllium Husk
  • Salt
  • Olive oil (or any cooking fat of your choice), for deep frying

Instructions
 

Prepare Chicken Mince:

  • In a food processor, blend the chicken breast with Old Bay seasoning and a pinch of salt until smooth.
  • Transfer the chicken mince to a large bowl and portion it into 1 oz servings.
  • Refrigerate the portions for at least 15 minutes until firm.

Prepare Egg Wash and Coating:

  • In a separate bowl, whisk together the egg and a pinch of salt until well combined.
  • Dip each chicken mince portion first into the egg wash, then thoroughly coat with psyllium husk. Set aside on a plate.

Fry the Nuggets:

  • Heat a large pot with enough olive oil for deep frying to 375°F (190°c).
  • Deep fry the chicken nuggets until they reach an internal temperature of 165°F (75°c), about 5 minutes.
  • Remove the nuggets from the oil and place them on a paper towel to drain excess oil.

Serve:

  • Serve the chicken nuggets hot.
