Instructions
In a mortar and pestle, grind the fennel seeds, black peppercorns, and salt into a fine spice mix.
n a large mixing bowl, combine the ground pork with the spice mix, white pepper, garlic powder, smoked paprika, and nutmeg. Mix until evenly incorporated.
Using a ring mold or cookie cutter, shape the sausage mixture into 5 equal patties.
In a cast iron skillet or frying pan over medium heat, heat the cooking fat. Fry the patties for 3–4 minutes per side, until browned and fully cooked through.
Serve hot with fried eggs or in a breakfast sandwich.
