Ingredients
 
 

  • 0.55 lbs Ground Pork
  • 1/2 Tsp Fennel Seeds
  • 1/2 Tsp Whole Black Peppercorns
  • 1/2 Tsp Sea Salt
  • 1/4 Tsp White Pepper
  • 1/4 Tsp Garlic Powder
  • 1/4 Tsp Smoked Paprika
  • 1/8 Tsp Nutmeg Powder
  • 1 Tbsp Butter for frying (can also use cooking oil or bacon fat)

Instructions
 

  • In a mortar and pestle, grind the fennel seeds, black peppercorns, and salt into a fine spice mix.
  • n a large mixing bowl, combine the ground pork with the spice mix, white pepper, garlic powder, smoked paprika, and nutmeg. Mix until evenly incorporated.
  • Using a ring mold or cookie cutter, shape the sausage mixture into 5 equal patties.
  • In a cast iron skillet or frying pan over medium heat, heat the cooking fat. Fry the patties for 3–4 minutes per side, until browned and fully cooked through.
  • Serve hot with fried eggs or in a breakfast sandwich.
