Instructions
Beat 2 eggs with salt and pepper
Heat 1 Tbsp of oil in the wok, Make an omelet from the eggs and scrambled or chop up.
In the same wok heat another tbsp of oil and fry the spring onion white, garlic and chicken
Season with salt and pepper
Add in the mushrooms and green peppers and cook
Add in the cooked cauliflower rice and chopped egg
Add in the soya sauce and vinegar and cook for 2 minutes more
Finish with spring onion greens.
Serve!
