  • Chop the chicken into smal pieces and season with salt, pepper, dried oregano and cayenne pepper
  • Melt the butter in the saucepan with the olive oil
  • Fry the spring onion white and the celery stalk (chopped)
  • Add in the chicken and cook
  • Mince or chop the garlic and add it in. Also add the green part of the spring onion
  • Once the garlic is starting to brown add in the chicken stock and water
  • Check for seasoning and bring to a gentle boil
  • Turn off the heat and add the cream and celery leaves/parsley
  • Serve.
