Slice the onion roughly and chop the spinach as small as possible after washing properly. Cut the paneer into cubes and season with salt and pepper on both sides.
Heat about 1/2 Tbsp of ghee in your frying pan and pan fry the paneer till golden brown on both sides. Once done set aside.
In the same pan heat 1tbsp of ghee and fry the onions till nice and golden brown. Add in the spinach and cook till it wilts. Then turn the heat off and cover with a lid and let it cool for about 5-10 minutes.
Blend the spinach and onions in a food processor/blender till a smooth paste is formed. Add water if needed to blend it.
Heat the left over 1/2 tbsp ghee in the frying pan and then add in the garam masala and fry till fragrant. Then pour in the spinach puree into the frying pan and mix well. Make sure to rinse out all the puree from the blender.
Taste the sauce for seasoning and add salt as required. Then add in the heavy cream and mix well. Once it's all come together add in the fried paneer and give everything a good mix before turning off the heat.
Serve with a little more cream on top and a sprinkle of garam masala. Enjoy!
