All I can think of is Pringles!
I must confess that the inspiration for this sour cream and onion omelet was a box of Pringles. Growing up in India getting my hands on a box of Pringles was like finding gold. I was nuts about the sour cream and onion crisps and I would always hope that a relative of mine would bring me some. Pringles, Nutella, Aero chocolates were just some of the foods I used to long for. Of course my tastes have changed over the years and I eat much less junk food. However once in a while I do like to treat myself to a box of Pringles.
That was the inspiration for this recipe. And truth be told we do now get Pringles here and they are much cheaper as they are made locally but it doesn’t quite have the same feeling as when it was something that was hard to come by. I definitely relished it more in my childhood. What about you? Which was your favourite flavour?

Experiment with these flavours
I have a few more ideas. If you don’t want to have an omelet you can make this same recipe a number of ways. Mix everything together in the pan and have it scrambled. You can also fry the egg and sprinkle the onions on it while it’s cooking. Finish with a dollop of the sour cream on top. Another great idea is poach the egg and place it on a dollop of sour cream in a bowl. Finish it by browning the onions and butter in a pan and pouring it over the poached egg. So many options.
