90 Second Almond Flour Keto Bread

The easiest keto bread, made in 90 seconds in the microwave

Bread is one of the foods that people miss most on keto – at least I know I did – and a loaf of almond flour bread is a great alternative. But, for a lot of folks, it’s quite a task to make, because you have to separate eggs, and whisk the whites to stiff peaks and so on. So, for those folks on the go, or those without ovens and those simply without the time or inclination to cook, this 90-second keto bread made in the microwave is the perfect solution. It’s literally as simple as mixing a few ingredients in a mug and popping it in the microwave. And in less than two minutes you have a keto friendly bread, almost as easy as putting bread in the toaster.

Now I’ve used almond flour for this recipe and I’m often if you can just sub the almond flour for coconut flour. Unfortunately, the answer is NO, they are both different flours and react very differently. If you’ve only got coconut flour, try our 90 second coconut flour mug bread instead.

 

Use your keto bread for just about anything!

I can’t tell you how this changed my life. This keto bread is extremely versatile and can be used for many dishes. I found that just adding a bit of stevia and vanilla to it makes it the perfect replacement for lady finger biscuits or savoiardi in our keto tiramisu. It’s also fantastic to use to make keto bread crumbs with and perfect for burgers or sandwiches. This bread is also just 4 net carbs for the entire mug, so that is a definite plus point. And with 28 grams of fat and 13 grams of protein, it really balances out, macros-wise.

      1. Hi Sahil, this is the first time I have seen a video from am so used to the 800Watt that and I love the way you show us how to make the Keto bread in a mug. But can you pleas tell me how many Watt your Microwave is as my new one is 1200 Watt and I am so used to the old 800Watt Microwave that I noticed that everything is getting cooked much quicker and I don’t want to over cook the bread.

        1. I think mine is also 1200 watts. See if you over cook this by 10-20 seconds nothing will happen. Only when you cook for 1 minute or more than the given time will it dry out.

          2. Ceejoy – Please don’t give into fear mongering. There is nothing wrong with the microwave. It is 100% safe to use. If you still want to not use one, that’s your choice but please don’t spread incorrect information and try and get people to be fearful of something that is safe. If you have any legit studies to prove this (recent ones) please share those.

      2. Thanks for putting all the macros and calorie count. I love sardines and kippers on toast. Now I can have a wonderful breakfast. Probably I’ll input 550 calories on “Lose It”. . OK I’ll swim 90 minutes to erase the calories from “Lose It”.

        1. I don’t have a microwave, can it be baked in a oven and how long.
          And microwaves do change something in protein foods. That is why breast milk is never microwaved.

          1. It can be baked in the oven at 170C for about 10-12 minutes. Use the toothpick to check if it’s done.

            Also that’s absolutely wrong information about microwaves. Breast milk is not microwaved because of the uneven heating which can cause ‘hot spots’ which will lead to your baby’s mouth being burned. It does nothing to the nutrition of the milk itself or the proteins. There is a lot of fear mongering about microwaves and most people don’t understand the basic principle of how it works. It’s like people who blindly say there are ‘chemicals’ in food not realizing that everything is a chemical compound, even drinking water. So don’t worry 🙂

          2. Other than what Sahil says I want to add…that breast milk contains lot of live organisms (antibodies, etc) that gives passes from mother to baby and helps protect her from diseases that mother is immune to….so microwaving will destroy these helpful features (and so will heating) which is why it is not recommended.
            I want to add that a generation back when radios and TVs were a new thing, people were afraid of them…talked about the rays that are being generated from them, etc etc. But now they are completely acceptable and OK to use in our household! So lets not just give in to this way of fear mongering…and evolve with time. I realize the need to simply and de-app and de-gadgetize our lives, but it cannot be through such baseless rumors.

          1. Wow You seem to be very ignorant to what microwaves do to foods, why be mean to those who know the truth and just ask if it can be baked? You claim microwaves do nothing to the nutrition of foods yet that is a complete lie and most likely based in the majority of your recipes use the microwave. I did major research on this 15 years ago and what I found not only had me stop using microwaves but actually removed them from my living space.

            Do a quick test on your own, microwave water and let it cool and water a plant with nothing but microwaved water and let me know what happens, then come back to everyone you have been ignorant to about warning about microwaves and apologize.

    1. This recipe is by far the best low carb bread recipe I have tried! The texture and flavor is close to an English muffin especially when lightly grilled. It holds up to any topping! In addition it keeps me full for hours! Thank you for your culinary creativity in creating this recipe! It has made the low carb way of eating easier!

    2. Thanks for that great recipe Sahil. I am new to Keto and just trying out new recipes. I have made your bread twice now, and came out great each time. I toasted mine in Ghee on the pan and added some cooked spinach and bell peppers on top to make open faced sandwiches.

    3. Thanks so much for this recipe – it’s a staple. I always have some in the fridge and take it with me to restaurants – no more lettuce buns! I tweaked it a bit using some other keto supplies i had on hand – 1/4 tsp xanthan gum makes it less dense, 1-2 tsp of psyllium husk makes it a bit more bready, and then a spash of avacado or coconut oil to add moister and fat. I will sometimes fold in chedder and jalapenos for added flavor boost. Again, thank you -this recipe has helped me fulfill my need for bread on this diet.

  5. I just tried this recipe in my kitchen. OMG thank you so so much for this wonderful idea! The only thing I think I will try next time is to add just a dash or so of salt to the mug before microwaving (although it already tastes great!). I think it will be fun to experiment with adding some different seasonings or herbs to the batter before baking it, too, just for variety.

    One of the hardest things to do when I travel is to find something to take for lunch OTHER than salads–that gets old fast! This will be a HUGE help so that I can add “bread” back into my lunch menus! Thank you VERY much! So fast, so easy, and VERY usable for those of us stuck in hotel rooms with limited options for eating in. It really does have the texture of whole-grain type of bread!! You’re a life saver! 😀

    1. A flax seed egg is an often used replacement, just mix 1 tbsp flax seed with 3 tbsp of water.
      Other vegan options, though usually for sweeter bakings, are 1/2 a medium banana (mashed), 4 tbsp of applesauce and 4 tbsp of silken tofu.
      All these are replacements for 1 egg, but I haven’t used hem myself, so you’ll have to try them out yourself to find which you prefer.
      Be careful with the macro’s though, banana is certainly not keto.

  10. Just tried this. Added a teaspoon of flax powder. Came out really well. Then toasted it in ghee and slathered on cream cheese and powdered pepper on top. Delicious ?.

  11. Initially tasted good THEN had a horrible chemical taste to it !! Used organic egg, 100% almond meal, Kerry gold butter and baking powder (only 1/2 teaspoon) so I assuming it’s the baking powder , perhaps it’s got aluminium in it Although package says gluten free

    1. Hi Darren, I can only imagine the baking powder giving it that taste. Try making one without it and see if you still get that taste. I can’t imagine why that should be the case.

    2. Gluten and aluminium aren’t the same thing. Gluten is just a protein. You have to look for aluminum free baking powder to eliminate that taste. Cheers

    1. Why don’t you just mix all ingredients the night before? Then cook fresh in the morning. Its less than a minute to cook and will be nice and warm. Mind you, it took me less than 5 minutes to prepare…..

I love burgers, and was sad I won’t be able to have a bun anymore. I tried a different recipe before and it just tasted like eggs. This looks like it will work much better for me.   19. Like you say on your show, I am a foodie and hate it when recipes on websites turn out tasting bleh. This bread has a great texture. After making it a few times plain now, I added some sesame seeds to the batter and that turned out great too. I make an open faced breakfast sandwich with a slice of this almond flour bread, plenty of cream cheese and scrambled eggs. Paired with coffee. So tasty, that I can’t tell it isn’t a regular scrumptious egg sandwich.

Love your channel, been experimenting with the keto lifestyle and ive been making this recipe for the last couple of days. while they turn out great i did notice that slightly bitter aftertaste in one batch (im assuming is baking powder) which doesnt happen everytime. Could I have used too much?

    1. Yes that aftertaste is probably the baking powder. Also yeah the eggy taste is normal because it’s got egg. The best you can do is buy fresher eggs or these days you can even find ‘odourless’ eggs in the market.

  22. Hello, thank you for the recipe! I’m only a short time on the Keto program and miss carbs SOOO much! Tried this bread for the first time tonight and have a few things to say. For anyone not on the metric system, it works out to be about 3.2 tablespoons for the flour and 2.1 teaspoons for the butter. I’m assuming mine came out okay with those measurements but, if someone came up with a different amount, please let me know. Now, the bread came out exactly as you said it would. I cut mine in slices and put it straight into the toaster oven until it started to brown on top and get a little crunchy. For my filling I used some aged white cheddar and a couple thin slices of organic ham. With the cup I used, this came out about 2/3 the size of an English muffin. I was so excited for the first bite! Now, the negatives, which I’m hoping to fix. As it was microwaving, and when I pulled it out, there was just a really unpleasant, weird egg smell. I’m SOOO over eggs right now that I’m hoping I can figure out a way for that to go away. Maybe adding some garlic to the mix??? Also, I could taste the egg in the bread. Maybe for a breakfast sandwich it wouldn’t be so noticeable but, for the sandwich I made, it almost hid the taste of my ham and cheese. Back to the positives. This was only my first attempt and I’m THRILLED that I felt like I was having a sandwich. I like how some people have added their “recipes.” If I come up with a good one, I’ll write a quick replay.   23. This is brilliant. I made it today not in a mug but a cereal bowl. So it was bigger. I could only eat half. Rather filling. I layered it with cream cheese and a thin slice of smoked ham for mid afternoon snack. Slight bitter after taste which i think is from the baking powder. I am going to make it again with herbs like some others have suggested. Thanks HBK?

  24. Absolutely wonderful recipe! Recently switched to KETO diet for my diabetes since the recommended diet wasn’t working (without loads of insulin, etc.) and hubby recently deemed pre-diabetic. My poor mother, who is a 71-year-old diabetic carb-o-holic, has been a very unhappy camper with the changes, until today. She had a delicious hamburger (using your recipe made in a wider dish) and jicama fries. She actually FINISHED her meal with a smile! Maybe now she won’t kill me in my sleep for tossing all the bread/carbs. ? Thanks!

  26. Hello from Jakarta, Indonesia! I just tried your recipe coz i was making an eggs bennedict & needed something for “bread”. Your recipe was BY FAR the easiest to make & quite tasty! Initially i was worried about the “eggy” taste, but didn’t happen. I think i will be making this often… i will pre-measure the 30gr of almond flour & cut up 10gr of butter pieces for easier assembly in the mornings. Cheers!

  32. Just made a batch for 10 rounds. 300 grams flour. 100 grams of frozen butter. 1.5 tablespoons of baking powder and 8 home grown large eggs. I got 12 out of this mixture. Will freeze some.     I’m a little confused over the Nutrition Info? Or at least the 2g of net carbs.
    28 grams of Bob’s Red Mill Almond Flour has 9 grams of carbs, and 3 grams of fiber, so wouldn’t that make this 6 net carbs?

    1. I agree. I was doing the calculations, and double checking everything, and the almond flour alone pushes it over 6 net carbs :/

  35. I don’t know what I’m doing wrong, but mine did not turn out.
    I have baked with almond flour for years so it’s not inexperience.
    I do not own a microwave but converted the 180c to 350f and baked for 10 min. It was still liquid.
    Any suggestions?

  36. It took 25 min at 350 in an counter top oven using unblanched almond flour, but we like it! I plan on baking batches for the week in ramekins.

  38. Soooooo fluffy, yummy and versatile! I just made it for the first time. Been making the coconut flour mug bread the past couple of days but this is so less dense. Grilled a couple of pieces and HOLY HELL it’s amazing! Love your site and your recipes. Coconut flour wraps (love wrapping my salad) are next! Neither bread has affected my keto either. I’m also 100% Paleo. Swapping out the cream for ghee in the coconut mug bread works really well!

  39. The Almond mug bread was incredibly easy to make and very tasty as well. I toasted in on a pan using 1tsp ghee and topped it with Avocado. Yummm…

    Only question I have: Shouldn’t the net barbs be 6g or 5g, not 3g, since the almoand flour in itself has 9g total carb and 3g fiber? May be my calculations are wrong?

    1. I will recheck my calculations. Just looking right now online it says 6 grams of carbohydrates, and 3 grams of fiber for every 1/4 cup.

  43. Hi, Sahil! Just wondering if the sizing of the mug matters, I’ve skimmed the comments to maybe see if anyone else had a similar question, but I may have missed it, if so. I like to say the mug I used is the average size, but seems like my little cylinder bread is wonky, are air bubbles an issue, also? Thanks! ?

    1. Sounds like the Keto bread to me it’s a cylindrical load and depending on how well it’s mixed it has those air bubbles.

  44. Fantastic! So easy to make. Not sure if I didn’t mix mine well enough, but it had a couple of “air holes” in it after baking. Did not matter…tastes great. I made a grilled cheese out of two of the slices…delicious! I can’t wait to try some of the ideas from the comments: adding herbs and/or spices, adding cinnamon and stevia, etc. Seems the possibilities are endless.

    One minor suggestion (that could help those who only look at the typed recipe and don’t watch the video), the Salted Butter ingredients could say Salted, Melted Butter 🙂 Thanks for this recipe!

  47. Wow… I made this for the first time yesterday and feel like I don’t need bread anymore this is a real game changer. It turned out a little dry the first time, but then I adjusted the time (80 seconds) and it made all the difference! I also added a little bit of swerve and it tasted like regular bread to me!!   49. Ok – just made it. Yes, it’s a bit eggy but I love eggs and not so much when you have toppings on it.

    I just used 1/3rd cup Almond Flour with 2 tsp of melted butter (with the baking soda and egg) and it was fabulous. For us US cooks that don’t want to weigh things. 80 Seconds in my micro.

    1. Yes, if you double the recipe you have to double every ingredient. 1 egg cannot handle that amount of almond flour as the egg is what makes it spongy.

  56. It’s actually surprised by this bread. It turned out really well. I actually sliced it topped it with a little bit of coconut cream mixed with stevia and put a couple of slices of fresh strawberries on it to have my own strawberry short cake like dessert. Who’s pretty good

  59. Thinking outside of the box tonight. O made the mug bread yesterday. Afterwards I realized what a great base platform it is.
    Tonight I wanted stuffed pork chops.
    I made two portions in flat soups bowls. Added a hard boiled egg & grilled onions from the pork rendering and sage dressing spices. It was awesome. The only thing I could have done to make it better would have been a quarter cup or less of water in the skillet for the flavor and poured it on top of the dressing. Don’t be afraid to experiment with this awesome bread recipe.

  60. Thank you Sahil for this wonderful recipe! I tried it today and it came out superb! I was worried about the after tastes, so was little conservative using the egg. Here’s what I did, 1/4 cup = almond flour, 1 tbsp = ground flaxseed with mixed berries, 0.5 egg white, little salt, pinch of baking powder, 1 tsp of butter and 1 tsp of olive oil.
    The bread came out super spongy and delicious, no after tastes and could toast them on the pan! Had them with egg white omelet, they tasted yummy as my breakfast.

  64. This recipe is amazingly versatile. I have used in three ways:

    1. Breakfast bread in a bowl: I added a bit of salt and stevia to taste, then 30 grams of blueberries. I have an 800 watt microwave, so to compensate for both the blueberries and the lower wattage, added 20 seconds. I put butter on the top and eat it right out of the bowl.

    2. Same recipe as above, but in a mug. I slice the blueberry bread. I toast my slices in a pan coated with a bit of coconut oil, then add a little bit of butter on top.

    3. Garlic Toast: add a bit of salt to your recipe. Microwave at for 1:40 (800 watts). Slice, butter, and add garlic powder (not garlic salt). Toast in a pan. Loved it.

  68. How have i just found your recipes? I made this in my oven and turned out great. Very filling and not time consuming at all. It holds together very well, loved it toasted.

    1. Change your baking powder. I think you might have used baking soda instead. That’s generally where the issue is. Taste your almond flour and see that it tastes fine on it’s own.

  71. Made these this morning, and my kids loved ’em! However, I had convert grams to cups and spoons. Your mileage may vary, but here is what worked for me:
    1/3 cup almond flour
    2.25 tsp coconut oil
    pinch of salt
    1/2 t baking powder
    1 egg
    Mix and nuke for 90 seconds

  74. Your net carb count is totally wrong. It works out to be nearly 9g of net carbs, NOT 2g. The almond flower alone is 9g total carbs and an egg has .7g of carbs. Please either correct your nutritional data or prove me wrong…:) Thanks!

    1. You are right. It’s not 2g it’s 4g per mug bread. We use 30 grams of almond flour which is 6g carbs and 1g from the egg which is 4g net carbs. I’ve corrected it. My earlier calculation was with ‘Trader Joe’s Almond Flour’. Bob’s Red Mill is what’ I’ve used now. Also almond flour = ground almonds which have 10g net carbs per 100g so we’re anyway looking at 3g net carbs for 30 grams of almond flour plus the .7g from the egg. So 4g is about right.

  75. Not quite sure if I’m doing it wrong but the mixture isn’t liquidy at all, it’s almost dry, it’s a bit difficult to mix and I had to add a tablespoon of water to even mix it. It didn’t come out fluffy looking like yours did, it’s rather dense (I guess from overmixing), but it doesn’t taste bad. I also added a pinch of oregano, cumin and garlic powder. I toasted it and had some hummus with it. 🙂 Any idea how to fix the batter or what I’m doing wrong?

    1. Maybe it’s the size of the egg. Perhaps your eggs are much smaller, so you could try adding 2 eggs.

    1. Hey Sunayana, it lasts for a week in the fridge at least and just put it in a tupperware box and store it. Ziplock bags etc are all fine as well.

  90. Just tried a modified version of this mug bread in a mini waffle maker and it works!
    Basically I added cinnamon and a sweetener to the mix then cooked half the batter in a mini waffle maker and BAM.. waffles. =D

  91. I have a severe allergy to wheat- anaphylactic shock, epipen, all the fun stuff. As such, I have several flour alternatives in the house. To lighten up the almond flour taste I used:
    20g almond flour
    5g coconut flour
    5g sweet white sorghum flour

I tried this recipe and YES it’s EASY and DELCIOUS in fact better than real bread, BUT I have one complaint, the recipe does not make enough all I get is one satisfying sitting, I want to make larger batches. I assume if I was to quadruple the measurements of all the ingredients would do the trick BUT would I quadruple the microwave time from 90 secs to 360 secs?

  100. Sahil you are a fucking GENIUS!!!! Brother this IS a life-changing recipe!! I am SO happy there aren’t even words, this FEELS like and TASTES like a delicious buttery soft white bread with the crusts cut off!!! I just made it and had some doubts but I could wait no longer.

    Measured the amounts exact, stirred it up in the mug and into the microwave for 90 seconds. For a moment I smelled egg and thought this was going to be a fail. 90 seconds up, and I pulled it from the microwave. It was a bit….”jiggly”…and I said outloud to my wife “oh well, it sounded too good to be true” as I tipped it out on the cutting board. It cooled for about 2 minutes and I said “well, might as well try it”, so I cut a slice. It LOOKED and cut like bread! I cut the rest for a total of 5 slices. In that time it was like magic, it BECAME bread!!

    I’m in the USA and peanut butter and jelly is the TRUE TEST of bread. Most of us grew up on PB&J on soft white bread, crusts cut off. It is iconic and requires real bread to pull it off…

    UNTIL YOU CAME ALONG AND FUCKING ALTERED TIME AND SPACE and created this AMAZING BREAD!! It is PERFECT!! NO egg taste. Mouthfeel is PERFECT! I could have sworn I was eating real white bread, soft and delicious!! And in 90 seconds start to finish!!!

  102. Wow, what a game-changer! It is a perfectly good bread substitute, and bread is something I miss the most. There are so many things that you might want to put on bread or a cracker, and this fits the bill. Cheese, smoked salmon, etc, just aren’t ‘right’ unless on bread or a cracker.

    Looking forward to trying this with Eggs Benedict.

  103. I tried to experiment i used homemade soy flour 15gm and 15gm dessicated coconut and other ingredients it came out perfect soft and bready one slice of it was enough with omlette.
